Casa Laguna's New Sous Chef

Casa Laguna and Executive Chef Sarah Spry Keenan are proud to announce the promotion of Brett Wilkinson to the position of Sous Chef. Chef Wilkinson has been with us since March of this year and has proven himself to be an invaluable member of our culinary staff, capable of producing our acclaimed breakfasts with the highest skill and consistency. Chef Wilkinson was born and raised in Orange, California and owes his love of cooking to his Grandfather Carlo, who was the “family chef.”  After graduating from the California Culinary Academy in San Francisco, Chef Wilkinson served his culinary “internship” with Aramark foodservice. For five years, prior to coming to Casa Laguna, Wilkinson served as the primary chef on sporting boats operating out of San Diego, serving up to 30 passengers on each voyage. Casa Laguna’s Exec Chef says she knew Chef Wilkinson was a perfect match for Casa Laguna from day one. “He appreciated his environment and immediately understood the concept behind our unique menu,” says Chef Keenan. “I need to have the highest degree of trust in my sous chef, and Brett has proven himself worthy of that trust.” Trained in the Classical French style, Chef Wilkinson says he uses elements of that tradition in every dish he makes, including the Spring Omelette he created for our latest menu. Chefs Keenan and Wilkinson are currently working on our upcoming Summer Menu, and Casa Laguna management and staff can’t wait to see what they come up with.
